Classic One-pot Beef Stew


1. 2 tbsp olive oil 2. 1kg Coles Brand Beef Chuck Casserole Steak, cut into 4cm chunk 3. 1 brown onion, chopped 4. 3 tbsp tomato paste 5. 2 tsp sweet paprika 6. 1 tbsp plain flour 7. 1 1/2 cups beef stock 8. 150g button mushrooms, quartered 9. 2 carrots, peeled and thickly sliced

Method Steps: 1. Heat half of the olive oil in a large saucepan over high heat.

Brown the beef in batches until well browned, then transfer it to a plate.  

Reduce the heat to medium, add the remaining oil, and cook the chopped onion for about 5 minutes until soft.  

Stir in the tomato paste and sweet paprika, then sprinkle the flour over the mixture. Cook, stirring, for another minute. Gradually pour in the beef stock while stirring constantly. 

Return the browned beef to the pan. Cover and bring the mixture just to a boil. Reduce the heat to very low and simmer gently, covered, for 1 hour.  

Replace the lid and continue cooking for 45 minutes. Finally, add the trimmed green beans and cook for an additional 15 minutes. 

Serve the hearty beef casserole topped with a dollop of sour cream. Enjoy your comforting meal!
