Easy Beef Taco Bake Recipe


– Vegetable oil for frying – 1 kg beef stewing steak, cut into 2cm chunk – 2 red onions, sliced (or white onions) – 2 mixed sweet peppers, sliced – 2 – 3 tablespoons fajita seasoning (or make your own with spices from your cupboard) – 2 teaspoons chilli flakes (optional) – 400 g tinned tomatoe – 300 ml chicken stock or water – Juice of 2 orange – 200 g tin sweetcorn, drained

Instructions: 1. Preheat the oven to 200°C/180°C fan. 2. Heat some vegetable oil in a casserole dish over high heat.

1. Add the beef, onions, and peppers to the casserole dish. 2. Fry for 5 minutes, then stir in the fajita seasoning and cook for 1 minute.

1. Stir in the tinned tomatoes and chicken stock/water. 2. Bring to a boil, then cover the casserole dish and transfer it to the oven.

1. Cook for 1½ – 2 hours, stirring halfway through, until the meat falls apart easily. 2. Remove from the oven and stir, breaking up the meat.

1. Stir in the orange juice and sweetcorn, then top with the tortilla triangles. 2. Scatter with the grated cheese, then return to the oven for 10 minutes until the tortilla pieces are golden and the cheese has melted.

Serve with fresh coriander and lime wedges if desired.
