Easy Chicken Noodle Soup


1. 2 tbsp olive oil 2. 1 medium onion, finely chopped 3. 1 medium carrot, diced 4. 1 large stick celery, thinly sliced 5. 1 medium potato, peeled and diced 6. 6 cups (1.5 litres) Massel chicken style liquid stock 7. 300g chicken breast fillets, diced 8. 50g spaghetti, broken into 5cm piece 9. 2 tbsp chopped flat leaf parsley leave 10. Thick wholegrain toast, to serve

Method Steps: 1. Heat olive oil in a saucepan over medium heat until hot.

Add the finely chopped onion and cook, stirring often, for 3 minutes. Add diced carrot, sliced celery, and diced potato. Cook, stirring often, for 5 minutes.

Add the chicken stock, cover, and bring to a boil. Reduce the heat, cover, and simmer for 15 minutes.

Then add the diced chicken and broken spaghetti pieces. Partially cover and cook for 8-10 minutes or until the pasta is tender.

Stir through the chopped parsley. Season to taste with salt and pepper.

Ladle the soup into serving bowls and serve with thick wholegrain toast. Enjoy your delicious homemade chicken noodle soup!
