Easy Fried Rice Recipe

Ingredients: – 1 cup Coles Long Grain White Rice – 2 tsp vegetable oil – 2 eggs, lightly whisked – 2 bacon rashers, chopped – 1 carrot, peeled and grated – 2 shallots, trimmed, finely sliced – 1/2 cup frozen peas, thawed (see notes for Low FODMAP substitution) – 1 tbsp soy sauce – Sesame seeds, to serve – Shallots, sliced, extra, to serve

Method Steps: 1. Cook the rice in a large saucepan of boiling water for 12 minutes or until tender. Drain and leave it to cool.

Heat oil in a non-stick wok or large frying pan over medium heat. Pour in the lightly whisked eggs and swirl them over the base to form an omelette. 

Cook for about 2 minutes or until set. Transfer the cooked omelette to a chopping board, let it cool slightly, then roll it up and slice it thickly. 

In the same wok or frying pan, add the chopped bacon and cook for about 4 minutes until light golden. Add the grated carrot and stir-fry for 1 minute.  

Then, add the sliced shallots, thawed peas, and cooked rice. Stir-fry for 3-4 minutes.  

Add the sliced egg and soy sauce, stirring until heated through. Serve immediately, sprinkled with sesame seeds and topped with extra sliced shallots.
