Our Best Basic Roast Chicken Recipe

Ingredients

1. 1.6kg whole chicken 2. 1 lemon, halved 3. 2 tsp Coles Classic Olive Oil

Method Steps: 1. Preheat the oven to 220°C. Lightly grease a roasting pan and place a wire rack into it. 

Trim any excess fat from the chicken and discard the neck.  

Rinse the chicken, including the cavity, under cold running water, and then pat it dry with paper towels. Season the cavity with salt and pepper. 

Gently squeeze the juice from half of the lemon over the chicken, rubbing it into the skin.  

Place both lemon halves into the chicken cavity and tie the legs together with kitchen string. 

Brush both sides of the chicken with olive oil and season it all over with salt and pepper. Place the chicken breast-side up onto the rack in the roasting pan. 

Roast for 1 hour or until the juices run clear when the chicken thigh is pierced with a skewer.  

Allow the chicken to stand, covered, for 10 minutes before serving.
