Pasta With Fried Eggs And Parmesan Recipe

Ingredients: – Salt for boiling water – ½ pound angel hair pasta – 6 tablespoons extra virgin olive oil – 2 large cloves garlic, lightly smashed and peeled – 4 egg – ¼ cup grated Parmesan cheese – Salt and freshly ground black pepper to taste – Parmesan cheese for serving

Instructions: 1. Bring a pot of salted water to a boil.

Heat up 4 tablespoons of olive oil in a pan over medium-low heat. Add the garlic cloves and cook for about 5 minutes until lightly colored on each side. 

Smash them lightly while cooking to release their flavor. This will infuse the oil with garlic flavor without overpowering it. Remove the garlic and add the remaining 2 tablespoons of oil to the pan.

Once the water is boiling, add the pasta and cook until "al dente" according to package instructions.

While the pasta is cooking, crack the eggs into the garlic-infused oil in the pan, still over medium-low heat. Cook until the egg whites are set but the yolks are still runny. Turn off the heat.

Drain the cooked pasta and add it to the pan with the eggs. Toss the pasta with the eggs, breaking up the yolks. The residual heat from the pasta will finish cooking the eggs.

Add ¼ cup of Parmesan cheese to the pasta and egg mixture, and stir to combine. Season with salt and pepper to taste.
