Perfect Spinach Salad

Making hard-boiled eggs: Make or pre-make them. Chop them into small pieces. Make smoked pecans: Add pecans, soy sauce, maple syrup, and smoked paprika to a small non-stick skillet over medium heat.

Reduce heat to low but slowly bubbling when it starts to bubble. Stir occasionally while simmering 6–8 minutes. 

After the liquid is mostly evaporated, stir constantly until it is completely cooked and the nuts start clumping.

Immediately remove the pecans from the fire and place them on parchment paper in a single layer. Sprinkle 2 pinches kosher salt and chill to room temperature, 5 minutes. 

Make dressing: Make Balsamic Vinaigrette. 

Prepare fresh ingredients: Thinly slice shallot. Apples can replace hard-boiled eggs. Thinly slice them. 

Serve spinach on plates or bowls. Add hard-boiled eggs, apple slices, smokey pecans, shallot, and feta cheese crumbles.
